What is it about electricity? They can have kerosene powered stuff and can take farm equipment and turn it to horse drawn, if the documentary I saw was right, but they can't have electric. . . . . . why?

It’s not that they can’t, it’s that their belief says they can’t. They don’t believe in modern day conveniences.Which would include cars, electricity, etc.

They live the way they have always lived. No electricity, no phones, no cars, etc. Kerosene lamps are not a modern convenience.

Because their basic belief is that they are to be set apart from the rest of the world, and electricity means relying on outsiders. Same with telephones.

The Amish do not approve of the use of electricity because they believe it is a temptation that could cause vanity in their close knit community. And since they also believe they must be separated from the outside world (Romans 12:2) as much as possible having the public electric utility bring power to their property would cause them to be connected too closely to that world.
However they do not shun progress as long as it does not interfere with their family values or faith. They will use battery powered and solar powered and hydro powered milking machines and gas powered fridges and lamps, along with old farming machinery.
The Old Order Amish use the bare minimum of modern conviences, but the New Order Amish will use electricity in the home for kitchen appliances and the telephone and the Beachy Amish-Mennonites use cars, electricity, phones, computers and sometimes even the Internet (however often that Internet will be restricted).
Exceptions to the rule are allowed, amish business men can use mobile phones, computers and fax machines. Disabled and pregnant women can use mobile phones. Even the strictest of the Old Order groups have a communal phone set aside in a field.

The Amish focus on having a close community. They think electricity would make them have a temptation to spend time with things like phones, computers and television and not with their friends and family. Also the Bible says they are not to be conformed to the world (Romans 12:2).
